My kids love a snack board, and that’s exactly what they got for dinner tonight. I gave them some leftover pasta and kale salad, frozen peas (they like them frozen 🤷🏼♀️), kiwi, carrot, bell pepper, grilled cheese (pita), raisins, and cheeses + fermented granola and hummus from @fermentedfarmer. Easy and delicious! 👏

Soba Bowls w/ Garlic Miso Shrimp and Seared Bok Choy. I marinated the shrimp in a combo of white miso paste, grated garlic and ginger, rice vinegar, lime juice, and honey, then cooked them in a very hot wok coated with sesame oil. For the delicious @whitesquirrelfarm bok choy, I heated some garlic and added the halved bok choy, seared it on each side for about 2 minutes, and squeezed fresh lemon juice over the top as soon as I took it out of the pan. (Cook in batches so you don’t crowd the pan.) I tossed the soba in a sauce of sesame oil, chili paste, soy sauce, lime juice, and honey. I added some fresh @whitesquirrelfarm jalapeño and cucumber to the assembled bowls and garnished with a little cilantro. The salad is the most amazing @whitesquirrelfarm arugula dressed with olive oil, lemon juice, and a tiny drizzle of ginger dressing.

Kohlrabi Apple Slaw: Slice kohlrabi and apple into matchsticks, dice a Serrano pepper, and finely chop a little kale and cilantro. I made an easy dressing of the juice of a lime, rice vinegar, maple syrup, and salt and pepper. I combined it all together, then let it marry in the fridge while I finished the butternut squash and black bean tacos. The squash, kale, kohlrabi, and Serrano were delicious and from my favorite local farmer @whitesquirrelfarm. Thanks for introducing us to kohlrabi, Farmers Chris and Tracy!

My sons have birthdays 7 days apart and Halloween is right in the middle of that week. Needless to say, we celebrate for a month. Tonight we had quinoa/English pea/sweet potato stuffed bell pepper jack o’ lanterns, mashed black bean spider with green bean legs and edamame eyes, and green (kale) witch finger cookies with blackberry jam (blood) and slivered almond fingernails. My kids were too grossed out at the sight of the witch fingers to try them 😂, but everything else was a hit! This meal took about 30 minutes to prepare. I’ve been loving halibut lately and recently made it two different ways. Tonight I pan seared it and made a lemon/butter/garlic/caper sauce. I served it with roasted veggies and saffron rice. Last week I broiled it and served it over puréed sweet potatoes and sautéed Bok Choy. My version of takeout takes no time at all. I made shrimp soba bowls for dinner tonight and it was ready in 20 minutes. While the noodles boiled, I sautéed summer squash, zucchini, and steamed broccoli (leftover from lunch) in ghee, tamari, and lime juice. Then I threw the lightly seasoned shrimp in and cooked until pink. I tossed the soba in a sauce of tamari, fish sauce, rice vinegar, lime juice, chili paste, and sesame oil. Tip: Buy the @seedsofchange_us organic 90 second rice pouches, microwave for 60 seconds and toast in a hot pan with some ghee or olive oil for a few minutes. I recently had my 3rd baby in 4.5 years and was pretty nervous about my postpartum journey this time around, as my last one was a bit rocky. I love #thefirst40days book and was determined to allow myself the 40 days of rest that eastern cultures offer their mothers. They give a new mom time to heal from the inside out with warm, comforting foods focused on recovery from childbirth. I was strategic about putting everything in place before the baby came and can’t get over the support I found from women supporting new moms. I saw @drmelissawenrich often for chiropractic adjustments throughout my pregnancy and after. She is tender and smart and passionate. My entire family sees her and we wouldn’t want to get by without her. It’s always such a struggle to figure out what to eat and what to feed your family when you have a new baby attached to you 24/7. But it’s also one of the most critical times to focus on nutrition for the sake of healing and milk production. Sweet Megan at @happybellynashville customized a meal plan for me week by week. She included broths, teas, congee, muffins, soups, granola, salads (eventually), bowls, energy bites, and so much more. Every ingredient served a purpose in postpartum recovery and lactation support. The food was delicious and it made my life so much easier! My favorite yogi @findyourbreath came to my house to guide my practice during pregnancy and to get my body ready for labor. She is always such a ray of sunshine and has me totally addicted to her homemade ghee! She also introduced me to Due Dates (eatduedates.com), her sister’s recipe for the magical little natural “candies” that allegedly help women during pregnancy, labor, and after. I’ll do a separate post about these later. Nashville has this spectacular circle of women who are dedicated to helping women and families during pregnancy, infertility, loss, and postpartum. It’s truly overwhelming to experience such unity. If you are close by and need some support, seek them out! They will most certainly welcome you with open arms and ears.
