Halibut Ceviche

I made halibut ceviche yesterday from @virgin_bay_seafood Alaskan Halibut. Earlier in the day, I diced up half a pound of fish and squeezed enough lemon and lime juice to cover it. After a few hours in the fridge I mixed it with a bunch of @whitesquirrelfarm veggies – cucumber, bell pepper, tomato, jalapeño – and some grilled corn, avocado and fresh cilantro. I mixed it all together and added a little salt and pepper. Vegan Sloppy Joes

For lunch today, we had vegan sloppy joes with a little help from my friends at @myveggiechef. The meal came with all the ingredients, chopped and ready to sauté. They were so good and tasted just like the real deal! I added some vegan cheese, butter lettuce, hot and spicy sprouts from @bloomsburyfarm, and super hot peppers 😳from @whitesquirrelfarm. Banana Pancakes

Served up some really good and really healthy banana pancakes this morning for breakfast. These had whole wheat flour, raw oats, baking powder, baking soda, flaxseed, sea salt, egg, almond milk, honey from my in-law’s Texas bees (thank you, @joancreamer! 🙌🏻), cinnamon, delicious vanilla extract from @rachelstitchedtogether (thank you so much! 🙌🏻), a little avocado oil, and mashed banana. The kids ate them right up and so did we. Smoked Salmon Salad

I made an easy dinner tonight for my husband and me and ordered my kid and his buddy pizza. 😬 I bought some @virgin_bay_seafood smoked salmon the other day and turned it into salmon salad with capers, @whitesquirrelfarm cucumbers and radishes. I dressed it with a combo of Dijon, kefir, lemon juice, hot sauce, red pepper flakes and s&p. Miso Grilled Halibut Bowls

Tonight we had miso grilled halibut bowls. My oven STILL isn’t working, so I’m learning to live my whole life on a stovetop. I steamed some carrots and tossed them in a little melted butter and s&p. The Brussels were sautéed in ginger turmeric @remedybonebroth, then tossed in EVOO, red pepper flakes and lemon zest. The flattop grill has become my best friend when it comes to fish. This @virgin_bay_seafood halibut was marinated in a combo of miso/mirin/sesame oil/fresh ginger/honey/sriracha. I cooked it on high heat on the flat top for 3-4 minutes on each side. I served my bowl with riced cauliflower and the boys got brown rice.
