Halibut Ceviche

I made halibut ceviche yesterday from @virgin_bay_seafood Alaskan Halibut. Earlier in the day, I diced up half a pound of fish and squeezed enough lemon and lime juice to cover it. After a few hours in the fridge I mixed it with a bunch of @whitesquirrelfarm veggies – cucumber, bell pepper, tomato, jalapeño – and some grilled corn, avocado and fresh cilantro. I mixed it all together and added a little salt and pepper.
